×Secalotricum is a fertile hybrid of male wheat (Triticum) and female rye (Secale). This grain is also described in its baking properties as a mixture of both, which is noticeable, for example, with regard to the washability of the gluten. Gluten can be easily washed out of flour to obtain saitan. Rye, on the other hand, is not well suited for this form of protein production.
×Secalotricum is hardly used for economic purposes, which may also be due to its complicated breeding.
