The crushed leaves of oregano should not be missing on any pizza and give many other dishes of Italian cuisine an unmistakable aroma. However, the herb of the Greek oregano, a subspecies (susp. hirtum), has the most intensive aroma and is therefore more often used than other subspecies to refine pizza and pasta sauces. Oregano is an important seasoning herb in the whole Mediterranean region and is also widely used in Tex-Mex cuisine.
In contrast to many other kitchen herbs, the dried leaves of oregano are said to be more aromatic than its fresh herb.
