Kaiser Alexander cucumbers at maturity have a dark brown skin with netting. At this stage, the fruit should be peeled before eating. The advantage of this hard skin is that it is easy to store. Depending on the matury, these cucumbers are prepared as picklers or slicing cucumber (like European or Burpless Cucumber). Unripe Kaiser Alexander cucumbers taste slightly sour. Ripe fruits are no longer sour, but they have this refreshing aroma of a “normal” European cucumber. Kaiser Alexander cucumbers are rich-bearing and less vulnerable to many plant diseases. The variety shown here, also known as “Emperor Alexander,” is an old variety from Russia and it is hardy.
Cucumbers in general (Cucumis sativus) are usually differentiated according to their (often variety-dependent best) harvest time and the resulting further processing.
