The long, immature capsule fruits of the horseradish tree are called “drumsticks” where they are used as fruit vegetables. They can be harvested after only 40 days. Otherwise the fruits lignify soon and are then inedible. Sometimes it is necessary to peel the “ribs” to remove too woody fruit parts.
The generic name “Moringa” derives from the Tamil word “Murungai” for “twisted capsule”, which refers to the immature fruits. A large tree can generate up to 1000 fruits in one year. Almost all parts of the horseradish tree are edible and very nutritious.
